Meet the Chef
ChefAdam Durham
I am a chef with 20+ years of experience in fine dining. Along that journey I realized my own unique style and approach to food - whole food, from scratch cooking that is approachable with great influence from the world of Italian cuisine. I also came to realize along that journey that the restaurant industry is run in a way that seems, to me, unethical and exploitative. I come from a background of social justice and so it was natural that when I started my own venture I would try to tackle the exploitation that I saw in my own field.
L’Orsa works on a profit sharing model, where profit is not our main focus, rather we seek to nourish our community and provide a stable, livable wage to our team, as well as donating a portion of profits to World Central Kitchen, a charity that provides food and aid to those places in the world that need it most. I love food - it is my passion, and it is my hope that through the medium of food I can make a difference in my community, the restaurant industry, and show that just because things are a certain way doesn’t mean that they have to be that way.
